I use IRORI to grill river fish. I put vegetables and meat in the pot and simmer them with miso and soy sauce. It makes a broth, so it's delicious to add udon or rice at the end.
It's great to warm up while watching the charcoal fire.
*Not available from late July to early August

"Sukiyaki is a Japanese dish made of thinly sliced beef, vegetables, tofu, and noodles simmered in a sweet and savory sauce called warishita."
"Sukiyaki is often eaten with a raw egg as a dipping sauce."

The most famous food here in Kochi Prefecture is "Katsuo no Tataki." Fresh bonito is seared on the surface and eaten with condiments. It is generally eaten with ponzu sauce, a mixture of soy sauce and vinegar, but in Kochi it is preferred to eat it with salt. This is a flavor that can only be achieved with fresh bonito.
